Ingredients:

For the beef:

  • 500g beef fillet
  • 1 tbsp olive oil
  • 2 tbsp soy sauce
  • 2 tbsp sake

  • ½ cup extra virgin olive oil
  • Juice of 1 lime
  • 1 tsp maple syrup

Method:

  • Prep the beef: Trim off any silver skin and season well with salt.
  • Sear it: Heat oil in a pan and brown the beef on all sides. Add soy sauce, sake, mirin and sugar. Simmer for 3 mins to reduce the liquid slightly.
  • Marinate: Place the beef and sauce in a sealed bag. Chill for at least 1 hour (4 is ideal).
  • Make the green sauce: Blend all sauce ingredients until chunky but cohesive. Adjust seasoning.
  • Slice & serve: Thinly slice beef, drizzle over bag juices, and top with herby green sauce.
