  • 6 fresh live scallops, guts removed, shells cleaned
  • 1 teaspoon baby capers
  • 1 tablespoon parsley leaves, roughly torn
  • ½ a lemon, juiced
  • ½ a chorizo (approx. 45g), casing removed, finely chopped
  • 2 tablespoons cultured butter

Method

  1. Preheat your BBQ grill or hibachi to medium heat.
  2. In a small bowl, combine the capers, parsley, and lemon juice. Season to taste and set aside.
  3. In a pan over medium-high heat, fry the chopped chorizo until golden and crisp, breaking it up with a spoon to create a crumb. Set aside.
  4. Place the scallops in their shells directly on the grill and divide the butter between them. Cook for ~5 minutes or until the flesh turns opaque.
  5. Spoon the caper-parsley dressing over each scallop, sprinkle with the chorizo crumb, and serve immediately.
